Edinburgh is a city steeped in mystery and has a surprisingly long and in depth history of distilling and the Edinburgh Gin Distillery are constantly researching, whether it’s gin, history, or botany. The first records of distilleries start in 1780 with the creation of the Lochrin Distillery. It was funded by the wealthy Stein and Haig families. In 1784 the Distillery was laid siege by the locals as the city was in the throes of a famine, and the locals believed the distillery was using grain they could be eating. They stormed the distillery but were held back by staff. This is why the Edinburgh Gin Distillery is underground, it’s easier to defend.
