Red Canaan is a blend of 50% Cabernet Sauvignon 30% Shiraz and 20% Merlot. Close proximity to the winery allowed for immediate crushing and fermenting. The colour of the kosher wine is extracted by a rigorous regime of pumping over and warm fermentation. Once all the red grapes from the various vineyards had been harvested, and malolactic fermentation completed, the winemaker chose the wines suitable for blending into the Canaan.
