The Memorias del Rambam is made entirely from Macabeo. The winery presses the grapes at no more than 0.5 bars, and siphons of the initial juices for use in the flagship Brut Reserva. You can expect delicate pastry and nut notes, set against a sumptuous backdrop of fruit.
