Harvested at night and thus preserved by the cold start of any fermentation, Grenache and Syrah undergo skin maceration. This wine offers flavours unheard-dotes Provencal cuisine: Ratatouille, barigoule artichokes, zucchini flowers, stuffed Provençal, sea bass with fennel, red mullet thyme flavoured with spices, garlic mayonnaise, pistou soup, anchovy paste, bouillabaisse. Grape variety : Syrah 30%, 30% Grenache, 40% Cinsault.
